Parmesan Onion Puffs
1 Cup grated parmesan cheese
5 Slices 7 grain or good brown bread
1 Tblsp finely chopped onion
2 Tblsp mayonnaise
1/8 Tsp cayenne pepper (or ¼ tsp if you like it hot)
Toast the bread to a golden brown. Most recipes call for you putting the bread in the oven to toast. I use the toaster then cut into rounds. I use an aperitif glass to cut the toast rounds, but a cookie cutter or any glass the right size to get four rounds to a slice of bread will do. Or, heck, just cut your toast into 1 ½ inch squares if you like. Save the trimmings for bread crumbs if you like.
Mix the other ingredients well and spoon a generous teaspoon onto each bread round or square, place on a cookie sheet, and pop into a 400 degree oven, use the broiler if you want to watch it closely. Brown, remove, cool slightly, and serve.
Makes 20 parmesan puffs.
